About this product
Green mangoes are cut, salted and dried on cotton sheets for three days until they lose their water and keep their bite. They are then layered with hand-ground masala and cold-pressed mustard oil and left to mature in ceramic jars for a month. Sharp, oily and hot in the way a Bihar pickle is supposed to be.
Looking after it
A layer of oil will rise to the top as the jar settles — that is the seal, not spoilage. Do not refrigerate; the oil solidifies and the masala stops maturing.

What we check before a product is listed
Four things we do not compromise on, because a handmade product is judged on all of them.
No preservatives in food
Pickles are cured with oil and salt, not vinegar and stabilisers. Bakery is dispatched within a week of baking.
Azo-free dyes in textiles
Reactive and natural dyes only, printed and dried in shade so the colour bonds to the fibre instead of sitting on it.
Cure times are respected
Six weeks for cold-process soap, four weeks for pickle, three weeks for lemon. Shortening these is how a handmade product is made to look handmade.
Batch-tested where it matters
Honey, ghee and spices are tested for adulteration before packing, and the report is available on request.

Mustard oil is the preservative. It forms a cap over the pickle so nothing spoils. Keep the top layer intact and use a dry spoon every time.
Is it very spicy?
It is a hot pickle in the north Indian style — expect noticeable chilli heat. Our lemon pickle is the gentler option if you want to start there.
